Bodacious Broccoli Salad Recipe
Chopped broccoli, crumbly bacon, lots of grated cheese, and red onion are tossed with a lovely red wine vinegar and mayonnaise dressing. The salad needs to chill at least an hour or two before serving.
This vegetarian broccoli salad also features cauliflower and is dressed with a light red wine vinaigrette.
I used a yellow onion as that is what I had and it worked fine. I think the cheddar cheese is a must. I would recommend chopping the broccoli rather small in order to incorporate the dressing for best flavor. Very good recipe.
I printed this recipe over a year ago, with intentions of making it "someday". Well, "someday" finally arrived, and I'm so glad it did. Though, I cheated and used Mann's Broccoli Slaw, instead of chopped broccoli (yes, I'm lazy!). It turned out perfectly. We had a dinner party with friends and I served this salad, the Summer Potato Salad, Dave's Low Country Boil, Tartar Sauce I, Old-Fashioned Lemonade from this site, my own homemade cocktail sauce, lots of melted butter, french bread and lots of beer. Then we proceeded to celebrate and immediately fall into a food coma, followed by a movie at the beach. Summer Perfection!
Loved this broccoli salad. It is definetly a keeper. My husband thought the onion was a bit overpowering. The recipe calls for a bit too much red onion for my taste as well. Perhaps next time I will add 1/4 instead of 1/2. Overall, it was a great salad. I will modify the onion and make it again.
This is the best recipe for broccoli salad I have tried. I only changed the recipe slightly. I added chopped walnuts and, when I have it, use 1/3 cauliflower and 2/3 broccoli.
For a potluck, I tripled the amt of broccoli, used 1lb of bacon, 1 8 oz pkg shredded cheddar and doubled the dressing. The proportions worked just fine. One mistake, I added appx 3/4 teasp of pepper (from a canister - not fresh ground) big mistake.. too peppery. Next time will make the effort to grind. Entire bowl was gobbled up.
